As a fellow Irishman from the west coast, I'm going to recommend ye should go to Gatlinburg in Tennessee. First I went to Tennessee to visit my fiancé we rented a cabin there up in the Smokey Mountains and there's lots of things nearby ye'd have a lot of fun with. Something I learned while in Tennessee is that Southern hospitality and Southern cooking is just like Irish hospitality and home cooking and it's pretty much because of all the Irish people who settled the place 🙂 https://www.youtube.com/watch?v=oYz8FEkEfS4
Born & raised Chicagoan. I would recommend deep dish to any tourists that haven't had it before for the taste & spectacle of the cheese pull. But deep down, I (and I'm sure many others) would say tavern style is the true Chicago-style at heart. I'm glad you got to experience both!
